Nyonya Cuisine
When Malacca was established as one of the world's great
trading centers in the 15th century, many Chinese flocked to
the city. Some of these Chinese traders decide to move there
permanently. And then the tin rush began, and thousands of
Chinese laborers arrived to work the mines, having come from
China in search of a new life and fortunes. They came from
different provinces in Southern China, and brought with them a
fascinating diversity of languages, traditions, food and
eating habits.
The migrants
were all men and at that time, there were hardly any Chinese
women in the Malay Peninsula. The Chinese ended up marrying
Malay women, and this amalgamation of Chinese and Malay
evolved a separate ethnic group known as the Straits Chinese
or Peranakans. Their way of life, language, food, customs and
dressing have developed a style uniquely their own.
The basic
essentials in Nyonya cooking are lemongrass (serai), galangal
(lengkuas), coconut milk (santan), chillies and limes as well
as palm sugar (gula melaka), glutinous rice flour and fragrant
screwpine (pandan) leaves.
There are three
variations of Nyonya cooking - Penang, Malacca and Singapore.
The Penang style of Nyonya cuisine has been influenced in part
by Thailand because of its proximity to the country while the
Malacca and Singapore styles are more Indonesian in influence.
